Whole Sirloin

Originating from the middle back, our whole sirloin weighs between 3 – 4 kg and features a delicious layer of fat along with rich internal marbling. This cut is tender and succulent, and is further enhanced by the dry aging process enhancing the meat’s flavour and tenderness but also concentrates its natural flavours, creating a rich, robust taste profile. The prolonged aging also allows for the development of complex flavours, including earthy undertones and a subtle nuttiness, enriching every bite with depth and character.
